High temperatures this week are expected to range between 89 and 94. And long about Thursday some monsoon moisture may return. Here are some strategies and recipes to help make tasty, light meals.
1. Don’t turn on your oven unless you really have to, and if you must bake, do it in the morning. Adding oven heat to afternoon heat can be a recipe for real discomfort. See if you can use your toaster oven instead of your full-sized oven. We've cooked everything from pizzas to cookies in our toaster oven.
2. Careful use of commercial ingredients like rotisserie chicken, pre cooked bacon and pre made crumb pie shells can reduce the need for oven use.
3. Use your outdoor grill for meats, vegetables and even fruits. Grilled peach halves with brown sugar and whipped cream or ice cream make a great dessert.
4. Plan ahead. grill an extra steak or two and use to make a composed salad along with grilled squash and other fresh vegetables. Cook extra chicken in your slow cooker to make pulled chicken sandwiches.
Of course salads and other vegetable dishes can supply all necessary nutritional needs, while keeping things light. Maybe have a vegetarian day. Or have a soup, salad, and sandwich day, with a cold soup, crisp salad and savory sandwiches.

Steak Salad (A Composed Salad)
12-15 oz thin strips of leftover grilled steak (you could also do this with roast beef from the deli)
1 head romaine lettuce torn into small pieces. I always discard the outermost leaves, cut off about half of the leafy top, cut into quarters lengthwise then tear into bite sized pieces. I also discard some of the toughest parts of the rib.
2 ripe tomatoes, cut into thin wedges or chunks
8-12 asparagus tips, steamed crisp/tender and totally cooled.
Other vegetables you might use: small florets of broccoli or cauliflower, cooked crisp/tender, cooled; small red or yellow potatoes, boiled, cooled, cut in quarters; yellow or orange bell peppers, cut in thin strips; green onions, sliced thin, white and green parts.
Cut steak strips into 2-3 inch pieces and roll up into little cylinders.
In 4 large wide bowls, arrange a bed of lettuce. Place steak in the middle and arrange the rest of the ingredients around it.
Serve with your favorite dressing. Something with some mustard would be good.
Crusty Bread with good butter is a welcome addition.
Slow Cooker Honey Garlic Chicken
Make extra, freeze to keep for a while or use to make Pilled Chicken Sandwiches.
Instant Pot Honey Garlic Chicken
In a hurry, but still want that delicious goodness of Honey Garlic Chicken? Why not make it in your Instant Pot - ready to serve from start to finish in less than 30 minutes.
Pulled Chicken Sandwiches (makes 4)
You will need
2 cups of pulled Chicken. Use either leftover rotisserie chicken or chicken meat from another day. Slow cooker boneless thighs or breast is good. Just use two forks to pull the meat apart while it is still warm or pull by hand.
Your favorite barbecue sauce
4 rolls (hamburger buns work fine)
Interesting, using the frozen veggies like this. Never thought of that. I’d use peas and corn. Could also add diced celery, green onions, any other al dente cooked veggie. To use as an main dish add cooked chicken, ham or beef and some diced cheese. I like to use 1/2 Mayo and 1/2 sour cream or yogurt or creme fraiche.
Instant Pot Broccoli Beef
Maybe use some olive oil and some sesame oil. Also, I wonder what would happen if you added the corn starch mix, stirred, added the broccoli on top, cooked a minute (or less?) then released pressure quickly and stirred. I have never tried it that way but it might produce crisper broccoli.

Bao or Baozi (Chinese Pork Dumpling)

Corn Salad with Feta (a composed salad)
(based on a recipe from Penzey’s Spices)
2 cups corn kernels. About 10 oz. frozen (thawed), 1 15 oz can (drained), or 2-3 ears fresh (boiled or grilled, kernels cut from cob.)
1 cup Italian Dressing (bottled or home made)
8 oz Feta Cheese, cut or crumbled into big chunks
24 cherry tomatoes, halved
Spinach or lettuce leaves
Optional Additions: avocado slices, very thin slices of red onion, small slices of Persian cucumbers, small croutons, olive halves.
Place corn kernels in medium bowl. Add 1/2 cup Italian dressing. Stir. Cover and let sit for at least one hour.
When ready to serve line four plates with spinach or lettuce leaves. Place 1/4 cup of corn in center. Place tomatoes, cheese and whatever optional ingredients (if using) around corn.
If you have Penzey’s Mural of Flavor spice blend, sprinkle a little on top. Or you could just use a little freshly ground black pepper.
Serve with additional dressing on the side.
I would use garlic powder, not salt and only a couple teaspoons salt in the mix. You can always add more salt at the end if you think it needs it.
Can be made in a large wide bowl for several people, or as a composed salad for each individual.
Healthy Potato Salad
Yes, I like more vegetables. Try diced red bell peppers, chopped snap peas, celery, green onions etc. I prefer 1/2 Mayo and 1/2 sour cream or Greek yoghurt.
But also great with chopped hard boiled eggs. Maybe some minced dill pickles. How about some chopped capers.
Corn on the Cob in the Microwave?!

Worry more about overcooking than undercooking, especially when naked grilling. Modern corn is so sweet and juicy you can almost eat it raw. It will dry out quickly at grill temps.
