You Scream, I Scream, We All Scream for Ice Cream

Ice Cream has a very long history. It is possible that ancient man mixed up snow, honey and fruit—but there is no way of knowing. We do know that in Persia, Greece and China various concoctions of ice and other foods were eaten by the 5th century BCE. Of course, only kings and other rich folks could afford such treats.

Ice Cream evolved through the centuries from still frozen versions to ones where the cream and other ingredients were stirred frequently to improve texture. But in 1843 Nancy M. Johnson applied for a patent on an ice cream making machine very similar to what we use today. It had an internal paddle which sat in a cylinder, surrounded by a mixture of ice and coarse salt. It had a handle which cranked the paddle round, an essential part of making modern ice cream, which is technically a frozen foam. Churning also helps keep the mixture from becoming icy.

Now there are a number of recipes for making ice cream at home without churning. The best rely on whipped cream and sweetened condensed milk to supply the correct texture.

As there are three Ice Cream Days this week, it seems like a good time to give some recipes for easily made Ice Cream.
