Yes, it’s Superbowl Week, but it’s also a great stocking-up week. For instance, the Wholly Guacamole that’s on sale at Fry’s - it can be easily frozen. Campbell’s Chicken Noodle or Tomato Soup - always handy to have in your cupboard. Rosarita Refried Beans, gotta have those on hand! So, go through the ads carefully, and pick out the items you want to keep available in your pantry/freezer. And the 2/1 price on Ball Park Franks doesn't happen every week. Just a few examples, here.
Now, if you want to make a big impression at your SuperBowl party, you should try this Wholly Guacamole recipe, called the HOMEGATING Snack Stadium. It should keep your guests happily occupied with munchies for the entire game.
Not feeling up to such extravagance? Here are a couple of recipes to try:
Lynne’s Best Bean Dip
2 cans Rosarita Refried Beans
1 8 oz. package of cream cheese
½ cup salsa
¼ cup chopped fresh cilantro
1 small onion, finely chopped
1 lb. each jack and cheddar cheese, grated
Empty the cans of refried beans into a glass baking dish (able to go into the microwave or oven). Cut the cream cheese in 1 inch cubes, drop into the beans, and stir. (Don’t worry about the cream cheese melting yet.) Add about a cup of both the jack and cheddar cheese, mix in.
Cover dish with plastic wrap, and place in microwave for about 5 minutes. Remove, and stir thoroughly, all the cheese should now be melted and creamy. Add in the salsa, onion and cilantro. Mix well. Cover the top with the remaining cheese. Place in the oven at 350º for about 30 minutes or until the cheese on top is melted and everything is bubbly.
Serve with chips or just eat it in a bowl. It’s that good.
Ummm… Steaks!
4 steaks, cut to about 1 inch thick
¼ c. Worchestshire Sauce
¼ c. Soy Sauce
3 cloves garlic, mashed
2 Tbs. olive oil
Fresh ground black pepper
Place the steaks into a ziplock bag. Add in the Worchestshire and Soy sauces, the garlic and the olive oil. Refrigerate for several hours, turning from time to time to ensure the steaks get well marinated.
When you’re ready to barbecue the steaks, take a saucer, and add a pile of freshly ground black pepper (you can mix in some fresh garlic and other herbs if you want). Pick up a steak and roll the edge in the pepper, until it’s liberally coated.
Barbecue as normal to the desired doneness. Serve sizzling hot.
